Ingredients

    2 Large Eggs
    1 Cup Sugar
    1 Can Pumpkin (15 ounces)
    1/2 Cup Applesauce
    1/4 Cup Water
    1 2/3 Cup Whole Wheat Flour
    1 Tsp Baking Soda
    3/4 Tsp Salt
    1 1/2 Tsp Pumpkin Pie Spice
    1/2 Tsp Baking Powder
    1/2 Cup Pecan Pieces

Directions

Preheat the oven to 350 degrees

Mix the eggs, sugar, pumpkin, applesauce, and water in a mixing bowl.

Mix in a separate bowl flour, baking soda, salt, baking powder, and spice in a mixing bowl.

Add dry ingrediants to the wet and mix. When thoroughly mixed add the pecans.

Spray the muffin pan or the muffin cups with Pam. Use a 1/4 measuring cup to fill each muffin cup. Make sure the batter is level in the measuring cup.

Bake for 25 minutes.

This makes 24 muffins. Number of servings 24.
