A little bit blintz, a little bit latke, a whole lot of flavor. Don't be afraid of the sweet/savory combo. You're 'on the edge' of a great meal! Ingredients

1 cup lowfat buttermilk
1 cup fat free cottage cheese
6 medium eggs
1/2 cup whole wheat flour
1 cup old fashioned oats
1 c mashed potato flakes
1 tsp baking powder
2 Tbs Splenda
1 tsp salt
1 tsp onion powder
4 medium scallions, finely sliced (both green & white)
3 Tbs parsley, finely minced
Directions
1. Put oats in a blender and run until they form a powdery flour. Place in a bowl.
2. Add flour, potato flakes, baking powder, salt, onion powder and Splenda.
3. In the blender, combine eggs, cottage cheese, buttermilk, scallions and parsley until frothy.
4. Gradually add to dry mixture until combined. (If batter is too thick, add up to 1/2 cup water.) Allow to stand for 15 minutes.
5. Pour into waffle iron or onto pancake griddle by 1/2 cup measure.
6. Makes 8-10 servings. Serve with 1/4 cup unsweetened applesauce. (I mix Splenda & apple pie spice into my applesauce.)
NOTE: The batter is rather runny, like a crepe, but it must be cooked slowly. Try med-low to medium, otherwise it will be browned on the outside and raw in the middle.
