Ingredients

    1 container of Spring Mix with Spinach
    1 container of fresh mushrooms
    1 1/2 vine-ripe tomatoes
    1 European cucumber, peeled and sliced
    2 whole carrots, peeled and sliced
    1/2 cup of sunflower seeds
    2 eggs, hardboiled and diced
    1/2 of white onion (or sweet onion), peeled and diced

Directions

Cook the eggs, peel and let cool
add the spring mix, cukes, sunflower seeds, tomotoes, carrots, onions, fresh mushrooms, etc.
Mix and Serve.
Makes 10- 1 cup servings
