Introduction

A tasty snack to use up leftovers. A tasty snack to use up leftovers.

Ingredients

    1 Cup cubed cooked Kumara (Sweet potato)
    1 can of pink salmon (185g)
    handful/ 1/4 cup chopped italian parsley (flat leaf- or other fresh herbs)

Directions

Makes 2 servings of three small cakes, but could be just 2 larger cakes.

Micowave the Kumara with water in a bowl for 6 mins on high. Remove , then mash it till smooth.

Drain a can of pink salmon (in brine is best) remove bones.

Stir together the mashed kumara and salmon, then add chopped herbs.

Use a tablespoon to form patties. Grill these in an electric grill (I use a "george Foreman") untill brown (about 10 mins).

This recipe is for a relatively small amount. I's enough for a snack for two people but the quantities can be adjusted simply enough.
