Introduction

A soft chewy molasses cookie reminiscent of an old fashioned ginger snap... only not so crunchy. A soft chewy molasses cookie reminiscent of an old fashioned ginger snap... only not so crunchy.
Number of Servings: 64

Ingredients

    3/4 C. Butter
    2 C. Brown Sugar
    2 Eggs, well beaten
    1/2 C. Molasses
    2 tsp. Vinegar
    3 3/4 C. Flour
    1 1/2 tsp. Baking Soda
    3 tsp. Ground Ginger
    1 tsp. Cinnamon
    1/4 tsp. Ground Cloves

Directions

Preheat oven to 325 degrees.
Cream together butter and brown sugar; stir in eggs, molasses and vinegar. Mix well.
Add flour, baking soda and spices, mix until well blended.
Form dough into 3/4 inch balls, place on greased baking sheet or use parchment paper on sheet. Flatten dough a little. Bake for 12 minutes. Cookies will continue to cook while they cool, do not remove from cookie sheet until they have cooled slightly. Store in airtight container. Makes about 5 dozen +/- , 2 inch cookies.
