Introduction

Ingredients

3 large boneless chicken breasts
1 medium sweet onion
1/2 package of frozen spinach
2 cups of sliced fresh mushrooms
3.5 ounces of goat cheese
6 toothpicks
Directions
Pound flat the chicken breasts between saran wrap and trim excess fat. In fry pan saute mushrooms. Dice the onion and add to the fry pan. Thaw and drain spinach and add to mix bowl. Add mushrooms and onions when browned and mix. Add goat cheese and toss.
Add about half cup of the mix to the flatten chicken breast and roll the breast up and secure with two toothpicks. Continue to do this with the rest of the mix and the chicken breasts. Add to casserole dish. If there is extra mix just add around the breasts in the casserole. Bake in 375 degree oven for about an hour.
