Introduction

Inspired by Vegetarian Times Broccoli-Edamame Soup with Jumbo Goat Cheese Croutons.
Don't be alarmed by the sodium. Just choose low sodium vegetable broth instead of "Better than Bullion" and water.

Number of Servings: 4

Ingredients

    1 tsp Olive Oil
    1 cup Frozen Diced Onions
    2 tsp Better than Bullion Vegetable Base mixed with 3 cups Water
    1 1/2 cup Frozen Shelled Edamame
    8 oz Frozen Winter Mix (Broccoli & Cauliflower Blend)
    2 cloves Garlic
    Mrs. Dash Salt-Free Seasoning (to taste)

Directions

Saute the onions in olive oil using a soup pot over medium heat.
Season with pepper. When the onions are slightly browned, deglaze the pan with 1/2 cup broth. Add remaining ingredients and rest of broth.
Simmer 20 minutes.
Remove from heat and blend untlil smooth using a stick blender or in batches using a traditional blender.

Season with Mrs. Dash or favorite salt-free herb blend.

Makes 5 cups
