Ingredients

1# Mild Italian Sausage
1 T. Olive Oil
1 T. Garlic, minced
1/2 tsp. red chillip pepper flakes
1/2 tsp. Italian Seasoning
8 oz. Roasted red peppers - cut into 1/4" julienne strips
1 1/2 tsp. kosher salt
1/2 tsp. ground black peppercorns
1/16th cup parsley chopped
3 oz. heavy cream
1 t. parmesan cheese, grated
Directions
Bolognese Sauce
* Over medium heat, cook Italian sausage in a pot until lightly browned.
* Drain off excess fat.
* Increase heat to medium high, add olive oil, garlic, chillil pepper flakes and Italian seasoning.
* Add tomatoes, roasted red peppers, salt and pepper. Mash tomatoes while stirring.
* Bring to a boil then reduce to a simmer for twenty minutes and then remove from heat.
* Add parsley
PENNE BOLOGNESE
* Prepare one pound of penne per package directions.
* Place bolognese sauce over medium high heat and add 3 oz. of heavy cream. Reduce for 2 minutes.
TO SERVE
Place 5 oz of cooked penne in bowl, top with bolognese sauce with cream. Sprinkle with parmesan cheese and top with parsley.
