This is a refreshingly good and healthy dip to be served with fresh vegetables, pita chips or tortilla chips. Can also pair with some low-fat sour cream. Ingredients

    – Black Beans, 3 cup (cooked per directions, cooled)
    – Tomato Paste, .5 can
    – Garlic, 4 cloves
    – Lime Juice, 2 lime yields
    – Water, 3 Tbsp
    – Cumin (ground), 1 tsp
    – Pepper, red or cayenne, .25 tsp
    – onion, fresh finely chopped, 0.25 cup (green or white)
    – 1 Chipotle Pepper in 1 Tbsp Adobo Sauce (or to taste)

Directions

Put everything in a food processor and mix until combined and smooth. Serve cold. Can garnish with sliced green onion and serve with low-fat sour cream if desired. Great for dipping fresh veggies (broccoli, celery, carrots, cauliflower, etc.) or your favorite pita or tortilla chips.

Also good to use in black bean quesadillas!

Makes 12 quarter-cup servings.
