Introduction

This was my mother in laws recipe and it is just such a great side dish. It's great to use with leftover rice. I prefer basmati, but you could use jasmine too. Ingredients

    2 c. cooked brown rice
    1 julienned bell pepper (red, orange or yellow)
    1 sliced onion
    1 tbsp. olive oil
    salt and pepper to taste

Directions

Julienne peppers and slice onions longways, sautee peppers and onions in pan sprayed with olive oil spray, add olive oil and rice, stir and cook until desired. add salt and pepper to taste.

It usually takes about 10 min. to cook once the rice is in the pan, just make sure to stir around with a spatula.
