Introduction

Ingredients

    2.5 tbsp almond meal
    2.5 tbsp dessicated coconut
    1.3 cups light coconut milk
    3 tsp ground corriander
    3 tsp freshly ground ancho pepper
    3 tsp freshly ground ginger
    1 tsp sea salt
    3 chicken breasts -cubed
    4 cardamom pods
    2 bay leaves
    2 tbsp chopped fresh cilantro

Directions

Toast coconut and almond until just tan. Mix coconut/almond mixture, coconut milk, corriander, ancho, ginger & salt. For best results, put mixture in mason jar and let sit overnight, but it can be used immediately.
Heat oil in a pan and sear chicken breast cubes (along with bay leaves and cardamom). Add coconut milk mixture & corriander and cook 10-15 minutes until done.
Makes approximately 5 servings. Best if served over rice.
