Introduction

This is some really "whole grain" bread made with dark beer and spent grain left over from making beer - but you can leave out the spent grain if you don't have it -- add barley flakes soaked instead. Ingredients

    PRE-DOUGH -- 1 1/2 cups of white flower, 1/2 tsp of dry baker's yeast and 3/4 cup of dark beer like Guinness--mix ingredients together in Kitchen Aid, cover and let rise 16 hours at room temp. A food grade plastic bucket works great for this.

    For the main dough, use all of the pre-dough, 1 oz cake yeast (fresh yeast this time) about 1 in square, 3/4 cup of water mixed with 1/4 of beer or a whole cup of beer (your choice), 1/2 tsp salt, 1 tbsp honey, mashed potato flakes (about 1/4 cup), and about 3 cups of flour - 2 wht/ 1 rye or throw in some wheat flour. Leave the whole grain flour to sprinkle on top. If you can get your hands on spent grain from someone who makes beer, add about 1/2 cup of that to dough. Mix in Kitchen-Aid for about 5 minutes until smooth, add sunflower seeds--mix again - if dough sticks to sides of bowl add a bit more flour. When dough shapes into a ball, cover and let rise room temp until doubled in size. Then fold over into oval shape and sprinkle with whole grain flour. Place roll into baking dish lined with parchment paper and let rise another 30 min.

Directions

Bake at 495 degree oven for about 10 minutes, decrease temp to 450 and bake until done, usually another 15-20 minutes. Inside temp of bread should be 195 or more and thermometer should come out clean. Hint - add a dish of water to oven if you would like a "real" crust. Makes about 20 servings of one slice each.
