Arby's Market Fresh Rueben Sandwich, one of my favorites to re-create saving you a whopping 340 calories, 18 grams fat and 29 grams of carbohydrates. If you can find a leaner cut of corned beef, it will make this re-creation even healthier!

This is a very adaptable base bread made from coconut flour for those of us who are avoiding wheat, standard flour, or gluten. To adapt simply add ingredients that you would to any other bread recipe. For example, to make sweet add cinnamon and raisins, or dried cranberries. To make savory add garlic and spinach, maybe pistachios. This recipe and its variations are limited only by your creativity and daring.
I like to make Italian chicken sandwiches with this. I split the pieces. Smear them with low- calorie mayonnaise that has balsamic vinegar mixed in. Put on a slab of marinated grilled chicken breast, a slice of fresh mozzarella, and serve with a mixture of chopped tomatoes, fresh garlic and basil, oregano, salt and pepper and just a little olive oil all mixed together. It's wonderful!!
Buy this bread at our local Amish Farmers Market and this recipe is out of their cookbook.
These things are ridiculously expensive, yet relatively easy to make at home. So I found a great recipe (at The Fresh Loaf.com) and adapted it here.
