Introduction

This is a very adaptable base bread made from coconut flour for those of us who are avoiding wheat, standard flour, or gluten. To adapt simply add ingredients that you would to any other bread recipe. For example, to make sweet add cinnamon and raisins, or dried cranberries. To make savory add garlic and spinach, maybe pistachios. This recipe and its variations are limited only by your creativity and daring. Ingredients

    7 eggs separated: whisk whites into a fluff. Mix with egg yolks one mashed medium banana and 2 tbsp coconut oil. Combine yolk mixture with white fluff then add 1/2 tsp salt, and 1/2 teaspoon baking soda. Now add 3/4 (substitute 5 tbsp, for reduced calorie) of coconut flour. Mix well. Pour into greased (coconut oil) bread pan and bake for 30-40 minutes at 350F. A knife should come out clean when inserted into the center. Remove immediately from bread pan and let cool before cutting.
    Enjoy.

    Variations include substituting honey for the banana (about 1/4 cup) or in addition to the banana. Add nuts, vegetables, fruits. We've made cinnamon raisin coconut four bread, garlic pistachio, etc.

    Tasty recipe, but nutrition info is WAY off because the eggs were clearly left off of the calculation. I re-calculated myself and it's 102 calories, 6.7g fat, 5.1g carbs, 5g protein. - 1/23/15
