Introduction

Number of Servings: 20

Ingredients

    1 whole egg
    1/4 tsp mustard powder
    1/2 tsp lemon juice
    1/2 tsp vinegar (ACV or white)
    1 cup light oil (grapeseed, safflower, light olive, walnut, etc.)
    1/4 tsp sea salt, to taste

Directions

In a container slightly larger around than your immersion blender's base, drop in whole egg, mustard, lemon juice, & vinegar. Next pour in all of the oil.

Put immersion blender down all the way to the bottom and turn it on - you will see a white "cloud" start to form, then bubble towards the top. When it starts coming towards the top of the oil, slowly bring the blender up and move it up and down until the mayo is nice and thick. The longer you blend the thicker it gets! At the very end, blend or stir in the salt, to taste.

Stores for 2-3 weeks in your fridge. Enjoy!!
