Ingredients

    2 cups almond flour (meal)
    2 tsp baking powder
    1/4 tsp salt
    1/2 cup (1 stick) butter, melted
    4 large or 5 medium eggs
    1/3 cup water
    equivalent of up to 3 Tbsp sugar, liquid preferred

Directions

Preheat oven to 350.
Butter 2 muffin top pans (12 cups).
Mix dry ingredients together well.
Add wet ingredients and mix thoroughly.
Divide into 12 muffin cups.
Bake 15-25 minutes, or until golden brown on top.
Can split and use 1 at a time or use 2 for a sandwich, or just eat as bread.

    I made them in 6 large muffin cups and added Flax meal for fiber. Makes great breakfast muffins with nut butter and fresh sliced strawberries, filling and I stayed full all morning. - 4/25/11

    Incredible!
    I didn't have a muffin top pan, so I just used a large muffin pan and just divided the batter equally (about 1/4 full). These were delicious. Life saver for a low carb diet. Thank you. - 6/18/16
