Introduction

A hearty, vegie filled breakfast that my boyfriend makes for the two of us. I usually only eat half a serving, though. A hearty, vegie filled breakfast that my boyfriend makes for the two of us. I usually only eat half a serving, though.

Ingredients

    1 tbsp Olive Oil
    5 large Eggs, fresh
    1 cup Spinach, frozen
    1 Italian tomato, chopped
    .5 cup Feta Cheese, crumbled
    1 small Onion, chopped

Directions

1. Add olive oil to a frying pan and heat to medium heat.
2. Add onions and cook until starting to turn translucent.
3. Add the rest of the ingredients and scramble together. Cook until egg is completely cooked.
Serve immediately.
