Ingredients

    Butter, salted, 1/3 cup
    Onions, raw, .5 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    Celery, raw, .5 cup, chopped
    Garlic, minced 1 tbsp
    Scallions, raw, .5 cup, chopped
    Chicken, uncooked, diced, 1.5 cups
    andouille chicken sausage, 1.5 cups sliced
    Whole Peeled Plum Tomatoes, drained, 2 cups
    Tomato Paste, 0.5 cup
    Chicken stock, 1 cup
    Bay Leaf, 1
    Salt, .5 tsp
    Pepper, red or cayenne, .25 tsp
    White Rice, long grain, 1 cup

Directions

Preheat oven to 350° Melt butter in ovenproof saucepan or Dutch oven. Add the onion, bell pepper, celery and garlic and cook over moderately high heat until tender. Stir in the scallions, chicken, and sausage. Sauté the mixture an additional 5 minutes then add the remaining ingredients, except the rice. Reduce the heat to low and simmer for 10-15 minutes. Stir in the rice, cover the pan, then place in the hot oven until the rice is tender, about 45 minutes; stir the mixture occasionally during cooking.

Fluff with fork, remove bay leaf and serve.
