Ingredients


    *1 1/2 cups whole wheat flour
    *1/3 cup light brown sugar
    *1/4 cup old fashioned rolled oats
    *2 teaspoons baking powder
    *1/2 teaspoon salt
    *2 teaspoon ground cinnamon
    *2 large mashed bananas
    *3/4 cup original vanilla almond milk
    *1 large egg
    *2 tablespoons canola oil
    *1 tbsp fresh lemon juice
    *1 1/2 cups fresh blueberries
    Optional: * Chopped walnuts or walnut halves (2 per muffin)

Directions

Preheat oven to 400°F. Line 12 muffin cups with paper liners. Combine flour, sugar, rolled oats, baking powder, cinnamon, and salt in medium bowl. whisk to blend.

Place mashed bananas in large bowl. Stir in almond milk, egg, oil, and lemon juice. Mix in dry ingredients, then blueberries. Divide batter among muffin papers. Place 2 walnut halves or chopped walnuts on top of each. Bake muffins until tester inserted into center comes out clean, about 20 minutes. Cool muffins of rack for 10 minutes. Enjoy!
