Introduction

Spinach soup is rich in flavours yet light in calories. Flavours of spinach blends so well with sweetness of onions and potatoes. Chunks of potatoes add substance to soup and brings on a creamy texture and smooth feel.

Ingredients

    * Spinach leaves 400g , washed, chopped
    * 2 medium sliced potatoes, peeled, sliced
    * 1 cup skim milk
    * 2½ cups water
    * Salt ½ tsp
    * Pepper ½ tsp

Directions

Add water spinach, onions, and potatoes in a sause pan. Cover and cook till potatoes are fully cooked and can be mashed easily.
Blend this mixture in a blender and when it cool downs strain with a strainer.
Return this mixture to the pan and add milk and bring it to boil.
Add seasoning and Enjoy.

    Good
    It was kind of bland, but I added a stock cube, celery and some lemon juice and I love it.
    So it's a good base but mine definitely needed some more flavour.

    Incredible!
    Always looking for a good soup, spinnach is better for you cooked and this is lower in carbs. will use sea salt though. Thank You for sharing. - 1/15/12
