Introduction

Ingredients

    2 tbsp olive oil
    1 tbsp minced garlic
    2 tbsp minced Ginger
    1 cup broccoli pieces
    1/2 cup snow peas tipped and tailed
    1 cup broccoli slaw
    1 cup red pepper chopped
    1/2 cup julienned carrots
    6 large mushrooms quartered
    8 small heads baby Bok Choy cut in half
    6 cobs of baby corn cut in half
    1 tbsp pickled Ginger drained and chopped
    9 stalks pickled asparagus
    2 tbsp lime juice
    4 tbsp pad Thai sauce
    2 tbsp sweet Thai chili sauce
    2 pkg miracle noodles fettucini style, (approx 12.5 oz rinsed well, drained and patted dry)
    11 oz cooked roast beef
    6 tbsp PC Memories of Szechwan (peanut satay sauce)

Directions

Makes 4 large servings

Stir fry Ginger and garlic until fragrant.
Add all vegetables at once stir frying until tender crisp.
Add beef pieces and noodles stir frying for 1 minute
more.
Add lime juice, picked asparagus, pickled Ginger, sweet chili sauce, hot chili sauce, Pad Thai sauce, and Szechwan peanut sauce stirring to blend flavours

Serve and enjoy
