Ingredients

    1 T Olive Oil
    .5 medium onion, chopped
    2 cloves garlic, chopped
    1 t coriander
    1 t cumin
    1 can black beans, drained and rinsed
    3 cups chicken broth (water or other broth may be substituted)
    .5 large sweet potato, cubed (about 1 cup cubed)
    salt and pepper to taste

Directions

Heat olive oil over medium-high heat in a pot. Add onion and cook till translucent - about 5-8 min. Then add garlic and spices. Cook till fragrant, about 1 min. Add beans, broth, and sweet potato. Turn up heat till soup comes to a boil, then turn down to simmer. Cook until potatoes are cooked through - about 10-15 minutes. Remove 1 cup worth of the beans/potatoes and then puree the rest either with a hand blender or regular blender. Return the cup of beans/potatoes to the pot. Season with salt and pepper to taste.

Yields 2 servings - may be doubled or tripled easily.

Optional toppings include:

yogurt, sour cream, heavy cream, cheese, thin lime slice..
