Ingredients

3 egg whites
1/2 tsp cream of tartar
2/3 cup granulated sugar
2 T cocoa powder
1/2 tsp. mint extract (be sure it is alcohol based, not oil)
1/2 tsp. vanilla extract
1/2 cup miniature chocolate chips
2 T unsweetened cocoa powder
Directions
Makes 38 1T cookies
Preheat the oven to 350 degrees
Beat the egg whites and the cream of tartar until starting to foam.
Gradually add the sugar and continue beating until the egg whites are stiff but not dry.
Fold in the cocoa, mint and vanilla extracts and the chocolate chips, being careful not to deflate the whites as you do this.
Line a baking sheet with parchment or baking paper (even if using a stone).
Use a 1 tablespoon measuring spoon to drop level spoonfuls of meringue onto the baking sheet leaving some room between cookies – scrape out with another spoon.
Bake for 10 minutes at 350, then lower the oven to 200 degrees and bake for 20 more minutes without opening the oven door.
Allow to cool completely before removing from pan.
