Introduction

Ingredients

2 Medium tomatoes
3 Jalapeno peppers with seeds (add more or less to suit your taste)
1 Whole medium to large zucchini (roughly 2 cups)
.25 of a large red onion (or to taste)
Roughly 4 tbsp fresh cilantro (without stems)
Juice of 1 small lime (or half of a large lime)
A few pinches of sea salt
Garlic powder to taste (or fresh garlic if you have it-not counted in tracker)
Directions
1. Thoroughly wash all vegetables
2. If using a food processor, roughly cut vegetables into large chunks (I chop the jalapenos into very small pieces to avoid biting into half of a pepper that the processor missed).
3. Combine all ingredients into food processor. Roughly pulse until everything is mixed well but still a chunky texture.
4. Transfer to an appropriate container and let sit for about a half hour in the refrigerator. Enjoy with chips, crackers, on sandwiches, etc!
*If not using a food processor simply cut all ingredients into smaller pieces to desired texture.
