Introduction

My mother's way to sneak veggies into her kids (a play on Dr. Suess' story book). I left out the cheddar cheese she used to put in it, but its still a tasty dish and almost effortless, thanks to the crock pot. Ingredients

    1.5 cups dry brown rice
    4 cups boiling water
    1 can condensed cream of mushroom soup
    1 lb. bag frozen cut leaf spinach
    2 bunches scallions (green onions) chopped
    412 grams (approx 15 oz.) extra lean ham steak, chopped

Directions

Makes 8 servings, 1.5 cups each

Put all ingredients, except ham, in crock pot. Cook on high for three hours, then reduce to low. Cook until rice is done. Add chopped ham. (Adding ham earlier results in tasteless ham.)
