My picky eaters love these breakfast potatoes. It's actually easier to cook them starting with fresh ingredients than trying to thaw and then "doctor" frozen potatoes. Ingredients

3 - Medium Potatoes
1/2 - Medium Onion
1/2 - Large Green Pepper
3 Tblsp - Minced Garlic from a Jar(water packed)
2 Tblsp - Olive Oil
Directions
A skillet with a lid is needed for this dish. The steam that builds up from the vegetables releasing their moisture helps to cook the potatoes.
Dice all the vegetables keeping the onion separate.
Add the olive oil and garlic to a large skillet. When oil is hot add the onions and cook until the onions are transparent and somewhat soft.
Lower the heat and add the potatoes and green peppers. Lightly toss the vegetables to coat them in the seasoned oil.
Cover and cook over a low flame stirring every few minutes so that the potatoes and peppers don't burn. Test for doneness by sticking the potatoes with a fork.
Add salt and pepper when the dish is served.
Serving Size: Makes (4) 1- cup servings
