Ingredients
-
8 oz. silken tofu
1 T. salad vinegar
squeeze of mustard
squeeze of honey (about 1 teaspoon)
thyme
basil
chives
Mrs. Dash garlic & herb
Tips
A fresh date or raisins could be used instead of honey.
Green onion or fresh chives are a nice addition, if you have any on hand.
Add anchovy paste for a ceaser salad taste.
Directions
I didn't measure the spices - start with a small amount (about 1/4 t.) and just season it to taste.
Whisk it all together, or process until smooth in food processor or blender.
Cover and refrigerate until you are ready to use it.
I get 2 servings out of this recipe, at 38 calories each.
Salad dressings like this one can use any combination of yogurt, sour cream and/or mayonnaise, with or without milk. I just use what I have on hand at the moment!
