Introduction
This is delicious, light, colorful and refreshing. With the greens and the colored fruit it has a festive look. We've served it at Christmas as a lighter alternative to heavier sides. We found a version of this from Good Housekeeping and changed it up to our own tastes. This is delicious, light, colorful and refreshing. With the greens and the colored fruit it has a festive look. Ingredients

1/2 C unsweetened coconut flakes
1 large orange
1 large pink grapefruit
1/4 lime juice
1/4 tsp salt
1/8 tsp ground black pepper
3 T olive oil
6 C mixed baby greens
Directions
Toast coconut flakes. Preheat oven to 350. Place coconut on a cookie sheet and toast in oven 3 minutes or until golden. Coconut can burn easily, so check after a couple minutes.
Separate orange and grapefruit into bite-sized segments, reserving juice that occurs while separating. Mix this juice with the lime juice and put in a large bowl.
Add salt and pepper to the juice mixture, and then add oil and whisk until blended. Add greens to this dressing, and toss to coat. Arrange the greens on 8 salad plates, and top with citrus segments and toasted coconut flakes.
