Introduction

with or without brown rice with or without brown rice
Number of Servings: 8

Ingredients

    1 can of Black beans drained and rinsed
    1 can of stewed chopped tomatoes drained and rinsed
    1 peeled chopped avacado
    1 cup of frozen fire roasted yellow corn
    1 cup of prepared brown rice cooled (optional)
    leave out or reduce amount rice if you are watching carbs.

Directions

Squeeze the juice of one lemon over the mixture of all ingredients. Season with salt, pepper and Cayane to taste......a great snack with or without chips...can also be a nice side dish!

    I did not have tomatoes so I chopped 1/2 of a red onion the juice of one lime with salt and pepper. Omitted the rice too. It was fabulous! Will be making this often. - 7/9/08

    Awesome! I made the whole thing in a pan (minus the rice and avacado) and added chicken. Then sprinkled with avacado and served over brown rice. - 3/13/08

    So delish! I used salsa from a jar in place of stewed tomatoes and also added frozen spinach and in place of fire roasted corn I used regular corn...I also didn't do the rice in it but I'm sure that would be good. Awesome, rich flavor...thank you! - 10/12/11
