Number of Servings: 6

Ingredients

    For masala Or curry Paste:
    1.Onions, raw, 2 cup, chopped
    2.Red Ripe Tomatoes, 3 cup, chopped
    3.Garlic, 6 cloves
    4.Ginger Root, 6 slices (1" dia)
    5.Coconut, toasted, 50 grams (optional)

    Hard Boiled Egg, 6 large
    Potato, raw, 1 cup diced
    Chili powder, 1 tbsp
    Turmeric powder
    garam masala powder, 1.5 tbsp
    Soybean Oil, 3 tbsp
    Coriander fresh for garnishing
    Water 6 cup
    salt to toste

Directions

Heat oil in pan. Add chopped onions and fry till brown in colour. Remove from heat and take out onions leaving remaining oil in pan. In mixer jar add chopeed tomatoes, garlic cloves, ginger, fried brown onions and chopped coriander . Make paste.
Add these masala paste to oil in pan,fry the paste till it gets to crumbly texture,add chilli powder, turmeric powder and garam masala powder.
Add potatoes to the pan and fry for 2 mins, add 6 cups of water. Salt to taste.
When the water boils add 6 hard boiled egg to the curry.simmer for 5 mins.
remove from heat and serve after garnishing with chopped coriander.
Its delicious with roti, paratha or steamed rice
