Ingredients

    2 Chicken Breasts
    3 Tbsp Mayonnaise Light (more or less for your tastes)
    .5 cup grated parmesan cheese
    w lemon wedges lemon juice (may need to modify to your tastes)
    1 4 oz. can of mushrooms (or you can use fresh)

Directions

Put chicken breasts and mushrooms into a shallow baking dish. I like to add a bit of water and garlic powder to it to give the chicken more moisture and added flavor. Bake chicken breasts/mushrooms in oven for 35 minutes at 350 degrees.

While chicken is baking, mix together the mayo, parm. cheese, and lemon juice. Refrigerate to chill until chicken is done baking.


Take chicken out of oven, turn oven up to 400 degrees, and lather or brush the mayo mix onto the chicken/mushrooms. When oven is preheated, bake chicken for an additional 10-15 minutes, or until sauce is slightly golden. I prefer my sauce to be a tad brown on top (not burnt, but just enough for some added flavor).

Remove from oven, serve, and enjoy!
