Ingredients

    Pork, fresh, loin, center rib (chops), boneless, separable lean only, cooked, braised, 2 chop, trimmed
    Onions, raw, .5 medium (2-1/2" dia) (remove)
    Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4"
    Spinach, fresh, 2 cup (remove)
    White Rice, medium grain, 1 cup (remove)
    Olive Oil, Extra Virgin, 1 tbs (remove)
    2 cups water
    1/2 tsp Penzey's Adobo Seasoning
    1/2 tsp Penzey's Arizona Dreaming seasoning

Directions

Cut pork into 1-inch pieces. Chop onion and peppers. Saute in skillet with olive oil. Add fresh spinach, cook until wilted. Add Rice, water, adobo seasoning, and Penzey's Arizona Dreaming seasoning, stir. Cover and simmer 20-25 minutes until rice is done. Serve immediately.
