Ingredients

    1/4 c. Light Butter
    1/4 c. Applesauce
    3/4 c. Brown Sugar, packed
    1/2 Orange Zest
    1/2 c. Egg Beaters
    1 1/3 c. Flour, All Purpose
    2 T. Cocoa, unsweetened
    2 t. Quatre Epices spice mix
    1 t. Baking Powder
    1/2 t. Baking Soda
    1/2 t. Salt
    1/2 c. Buttermilk 1%

Directions

Pre-heat oven to 350 degrees and butter and flour a 9"x9" pan.. Beat butter, sugar and zest till fluffy. Add eggs and beat till well blended. In separate bowl, sift flour and remaining dry ingredients. Add flour mixture to butter mixture 1/3 at a time, alternating with 1/2 of the buttermilk. Beat on low speed after each addition till blended. Pour into pan and bake 25-30 minutes till inserted toothpick comes out clean. Cool on rack for 10 minutes before removing from pan. Serve warm or cold. Frost with icing of choice (optional).
