Introduction

Number of Servings: 3

Ingredients

    4 tsp olive oil
    3 gloves garlic
    1/2 bag spinach
    3 (6 ounce ) chicken breast
    4 oz feta cheese or goat cheese
    salt (optional) and pepper to taste
    Mrs Dash Italian Herb

Directions

Preheat oven to 400 degrees
Spray 1/2 cooking sheet with olive oil or PAM
Saute garlic in 2 tsp olive oil for 45 seconds, stir in spinach and cook, stirring constantly to spinach wilts
Pound out chicken breast (wrap in saren wrap and hit with side of mallet)
Place 1 ounce of feta cheese on chicken
Place spinach on chicken
Roll chicken up and secure with a toothpick
Place on sprayed baking sheet
Place in preheated oven (400 degrees)
Cook for 10 minutes, check temperature with instant read thermometer (chicken is cooked when internal temperature reaches 165 degrees), may need to add additional 5 minutes to cook time depending on oven.

    This was fantastic! I bought feta by mistake
    But it was still so good. I did have to sauté them longer
    Due to the thickness and cooked in oven for about 15 minutes
    Served with whole grain brown rice. Fabulous!
