Ingredients

    3 garlic cloves, pressed
    1 teaspoon salt
    ¨ö cup olive oil
    ¨ö cup mild oil (safflower, sunflower, etc.)
    2 tablespoons apple cider vinegar
    ¨÷ cup fresh lemon juice
    freshly ground black pepper, to taste
    ¨ù teaspoon oregano (optional)

Directions

Press garlic into a bowl. With the back of a spoon, mash salt into garlic for a couple of minutes, until mixture turns to a creamy paste. Put all ingredients into a jar and shake vigorously.

Keep refrigerated.

Stir or shake just before serving, as dressing separates quickly.
