Introduction

A light panini sandwich made with grilled chicken, creamy avocado spread, and provalone.

Works best with sourdough bread, but 2 slices adds an additional 250 calories.

Ingredients

    Arnold Sandwich Thins
    Grilled chicken breast
    Fresh Avocado
    Provalone
    Light Mayonnaise
    Salt & Pepper
    Pam or EVOO spray

Directions

Heat up your panini maker, George Foreman grill, or panini skillet. In the meantime, slice grilled chicken breasts thinly & set aside. Peel and de-pit avocado & put in bowl. Mix in light mayo and salt & pepper to taste.

Spread avocado mix on Sandwich Thin. Add chicken. Top with 1/2 slice of provalone & other half of sandwich thin.

Spray hot surface with oil and put sandwich on. Spray top of sandwich with oil before pressing.



Serving Size: Makes 4 panini sandwiches
