Introduction
I experimented with using Quinoa as a breakfast and added about a teaspoon of peanut butter to the top. This is really delicious! I added a little brown sugar too! Ingredients

Water, 1 and 1/4 cup boiling
Quinoa - 1 cup
Raisins, cranberries, walnuts depending on your choice and taste
Cinnamon
Little brown sugar
Teaspoon of peanut butter served on top if you desire
Directions
Boil 1 and 1/4 cups of water and add the cup of Quinoa. Per the package directions, it says to simmer for 12 minutes.
Then I added in all the other ingredients covered and let sit for a few minutes to steam and plump up the raisins, cranberries, etc.
I decided to add a little brown sugar...I may try to get away from that!
Split into four serving bowls - refrigerated 3 for later use.
When ready to serve, added a teaspoon of peanut butter to the top.
Serving Size: makes four servings
