Ingredients
-
Egg Noodles, enriched, 8 oz
1/2 Hillshire Farm Turkey Smoked Sausage
1/2 medium Zucchini sliced
1 fresh sweet red pepper
1/2 medium onions, raw
Bacon, 4 medium slices, cooked
4 tbsp. Sour Cream
2 tbsp. Best Foods Regular Mayonnaise
2 tbsp. Kraft Mayo Light Mayonnaise
1/2 cup Mushrooms, canned
3 tbsp. fresh Parsley
Directions
Cook pasta in Chicken Broth according to package directions. I used Bowties which tend to take a bit longer, in my opinion.
Cook bacon in skillet and then remove to a napkin lined dish to dry. Cook mushrooms, red pepper, zucchini, onion in bacon grease. You should drain as much as you can to eliminate some of the fat but keep JUST enough for the bacon flavor to soak into the veggies. Add the sausage and cook through.
Once pasta is cooked and drained, return pasta (do not rinse) to large pan and add the veggie/kielbasa mixture. Stir to mix then add:
Sour Cream, Lite Mayo, garlic salt to taste, black pepper to taste & fresh parsley to taste. Mix through.
When plating, sprinkle with your favorite parmesan mix, the crushed bacon, and fresh roma tomato (if you have it on hand). The combination of the bacon, creamy mixture and the fresh tomato will be SURE to please all ages!
This is easy, quick and healthful. Normally I would NEVER use real mayonnaise or whole fat Sour Cream but that's what I had on hand. Feel free to make adjustments to your liking

I made a few adjustments due to what was in the fridge! BUT IT WAS A HIT,my husband at 1/2 of it! Didn't use REAL mayo, used Lite ranch instead and ADDED oregno and bacon bits. Also saute'd fresh spiniach into vegs, & Used Speghatti noodles, turkey bacon, then broiled the cheese for 5 min,400 THX! - 9/1/08
