Ingredients

    2 large boneless, skinless chicken breasts, cubed
    1 medium yellow summer squash, sliced
    1 medium zucchini squash, sliced
    1/2 package frozen mixed vegetables
    4 cups low sodium chicken broth
    1/4 c lite soy sauce (I prefer Bragg's liquid aminos)
    3 green onions. chopped
    6 - 8 baby potatoes, cut in half to absorb the flavor better
    a couple sprigs fresh dill weed, torn
    a couple sprigs fresh cilantro, torn
    1/2 c tomato sauce

Directions

Put everything in a large pot and simmer until potatos are tender and chicken is cooked through. Can be ready in as little as 30 minutes, or can be simmered all day.
Makes 6 large servings at 156 calories each and 19 grams of protein.
