Introduction

Fresh spinach and paneer! Fresh spinach and paneer!
Number of Servings: 4

Ingredients

    4 tbs oil
    2 cloves galic
    1 tablespoon ginger
    chili pepper paste (to taste)
    1/2 cup finely chopped onion
    2 tsp ground cumin
    1 tsp ground coriander
    1 tsp ground tumeric
    2 tbs veganaise
    8 cups spinach (torn)
    1/3 cup soy milk
    1 large chopped tomato
    280 gm paneer (chopped into 1/2 in cubes)

Directions

in 2 tbs of oil,cook garlic, onion until brown. Mix in spices and veganaise. Add spinach a bit at a time until cooked down. (about 10 min).
Meanwhile saute paneer in remaining oil, until brown on all sides.
Pour spinach mixture into a food processor. Add soy milk and blend until pureed. Pour back into saucepan, add tomato and heat. Add browned paneer, mix and heat through.
Serve over brown basmati rice.
