Introduction

Ingredients

    1/3 c chopped, toasted pecans
    graham cracker crust...sometimes I use a pastry crust
    8 oz neufchatel cheese (low fat cream cheese)
    1 c low fat sour cream
    1/2 c sugar
    1 tsp vanilla extract
    1 Tbs lemon juice (optional)
    1/2 c sugar
    2 Tbs cornstarch
    3/4 c water (better if 7-Up of Sprite used!)
    2 Tbs strawberry jello powder (1/3 of pkg)

Directions

Toast chopped pecans (~5 minutes in ~350 oven); sprinkle in bottom of crust. Set aside. Mix room temp cream cheese, sour cream, sugar (1/2 c), vanilla, (and lemon juice if you want it) together til creamy; spoon into crust. Next mix rest of sugar and cornstarch in microwaveable bowl, add water or 7-Up, stir and microwave ~1 min, stirring well and then continuing to microwave at 1 min intervals til thickened. (You can also do this on the stove, of course, on medium heat, but stirring more frequently, to keep it from burning.) Cool slightly, stirring periodically. Arrange strawberries over cream cheese mixture in pie, then spoon glaze over top and chill til served. Garnish with fresh strawberries on top! Yummy!
