Set up as a side dish but makes a delicious dinner when recipe is doubled (two servings is a great dinner size, even if you do 4 servings you are still under 250 calories!!) Ingredients

    1lb zucchini sliced thin
    8oz eggplant sliced thin
    2tbspn each of shallots, thyme and parm cheese
    1tsp fresh thyme chopped

Directions

heat oven to 400 degrees
place first 3 ingredients on greased foil lined baking sheet
coat with cooking spray
roast 10 minutes, season with salt & pepper if desired
sprinkle with shallots, parm & thyme and cook for another 10 min or until tender
