Ingredients

    * Bulgur, dry, 1 cup
    * Water, tap, 1.5 cup
    * *Lemon Juice, .25 cup
    * Olive Oil, .25 cup
    * Scallions, raw, 1 cup, chopped
    * Chopped fresh mint leaves, 1 cup ( 1bunch)
    * Parsley, 1 cup
    * Cucumber (with peel), 1 cucumber (8-1/4")
    * Cherry Tomatoes, Fresh cut in half 2 cups
    * Pepper, black, 1 tsp
    * Salt, 3.5 tsp

Directions

PLACE THE BULGUR IN A LARGE BOWL, POUR THE BOILING WATER, AND ADD THE LEMON JUICE, OLIVE OIL AND 1 1/2 TSP SALT. STIR, THEN ALLOW TO STAND AT ROOM TEMPERATURE FOR ABOUT AN HOUR.
ADD THE SCALLIONS, MINT, PARSLEY, CUCUMBER, TOMATOES, 2 TSP SALT AND THE PEPPER; MIX WELL. SEASON TO TASTE AND SERVE, OR COVER AND REFRIGERATE. THE FLAVOR WILL IMPROVE IF THE TABBOULEH SITS FOR A FEW HOURS.
