Introduction

This is a delightful fusion salad which proves to be a pleasant surprise to the palate. Use red onion if available, and feel free to substitute grilled chicken for crab if you are not a seafood lover. A splash of apple cider vinegar gives an extra kick without adding extra fat. Ingredients

    1 Head Iceburg Lettuce, chopped
    1 Large Apple, chopped
    1 Medium Red Onion, sliced
    1 Cup Mushrooms, sliced
    2 Vine-Ripened Red Tomatoes, chopped
    1 Cup Carrots, sliced
    3 oz Reduced Fat Feta, crumbled
    8 oz Chunk Imitation Crab, chopped

    Balsamic Basil Dressing to taste (approx 2 tbs per serving)

Directions

Chop the imitation crab meat into bite-size pieces, and set aside. Prepare your vegetables, chopping the lettuce, apple, onion, tomato, mushroom, and carrot. Mix together in a large bowl, sprinkling the imitation crab over the top. Crumble the feta over the crab, and toss with balsamic basil dressing. Optional: add a splash of apple cider vinegar for a little extra zing!
