Ingredients

    Ground beef, extra lean, 16 oz
    Onions, raw, 1 cup, chopped
    Red Ripe Tomatoes, 1 cup, chopped or sliced
    Garlic, 3 cloves
    Pepper, black, 1 tsp
    Cumin seed, .5 tsp
    Salt, 1 tbsp or to taste
    corn tortilla, 1 doz
    canola oil .5 cup

Directions

Brown beef with onion, tomato and garlic in skillet
Add cumin, salt, pepper. Cover and set aside.
Heat oil in skillet until shimmering.
Add corn tortilla and fold in half. Fry until its slightly crisp, but still pliable. About 1 to 2 minutes. Take out of oil and drain in paper towels on baking dish. When all tortillas have been fried, drained, add meat mixture. Serve immediately or keep hot in warm oven.
Serve with lettuce, tomato, cheese, and salsa.
