Ingredients

    12 large egg whites
    6 large whole eggs
    3/4 cup parmesan cheese, shredded
    1/2 cup skim milk
    1 Tbsp I can't believe it's not butter light
    1 lb asparagus, 1/2" ends cut off, cut into 2" pieces
    salt & pepper, to taste

Directions

1. Heat oven to 375 degrees.

2. In a large bowl, combine eggs, egg whites, cheese, milk, salt and pepper. Set aside.

3. In large, oven safe skillet, melt the butter over medium heat. Stir in asparagus and cook 4 minutes. Add onion and cook and additional 2 - 3 minutes. Spread vegetables evenly in skillet and pour egg mixture evenly over the top; reduce heat to medium-low. Cook 4-5 minutes, without stirring, until eggs are set around edge.

4. Place pan in the preheated oven and bake 9 - 10 minutes.
