Introduction
I got the recipe offline, but I changed some of the ingredients to low fat, or non-fat. It still tasted great. My daughter added some spices to make it a little bit spicy. I thought it was great. Ingredients

1/2 lb. boneless skinless chicken breast halves, cut into bite-sized pieces
2 Tbsp. flour
1 can (14-1/2 oz.) chicken broth (Swanson's 1/3
2 cups Skim milk
2 cups frozen mixed vegetables
1 cup Velveeta made with 2% milk (50% less fat)
1/2 cup onion, chopped (opt.)
1/2 cup green pepper, chopped (opt)
2 Tbsp cajun spice (opt)

Total Time: 30 min
Makes: 4 servings, 1-1/2 cups each
Directions
SPRAY large saucepan with cooking spray. Add chicken; cook and stir on medium-high heat 5 minutes or until cooked through. Stir in flour; cook and stir an additional minute.
ADD broth, milk and vegetables; stir. Reduce heat to medium. Bring just to boil, stirring frequently. Remove from heat.
STIR in cheese until completely melted.
HINT: Keep a close eye on the soup once the milk has been added. If the milk reaches a full boil, it can curdle. To prevent the soup from curdling, cook the soup on medium heat, stirring frequently.
