Ingredients

1 lb extra lean ground beef
1/2 lbs mushrooms
1 c Green Peppers
2 cans diced tomatoes
3/4-1 jar tomato/spaghetti sauce
16 oz fat free cottage cheese
8 oz light shredded cheese
10 oz frozen spinach (thawed and squeezed dry)
16 Oven Ready Lasagna Noodles
Italian Seasoning
Parmesan Cheese
Directions
1. Cook green pepper and mushrooms until crisp tender.
2. Brown Ground Beef.
3. Add Italian Seasoning, tomatoes and sauce & let simmer for a few minutes while doing the next step
4. Mix Cottage Cheese, spinach and cheese in separate bowl
5. Cover bottom of pan with sauce then 4 noodles
6. Top noodles with 1/2 cottage cheese mixture then 4 noodles
7. top with 1/3 to 1/2 of sauce and top with 4 noodles
8. Top noodles with remaining cotage cheese mixture plus 4 noodles
9. Cover noodles in remaining sauce & sprinkle with parmesan
10. Bake for 45 minutes & let rest 5-10 min before cutting
