Ingredients

    6 medium cooked potatoes (baked or boiled)
    1 small onion, diced
    1/2 cup chopped scallion
    1/4 cup dill pickle relish or diced dill pickles
    3 Tbl Capers
    1/4 cup chopped parsley
    2 eggs, hard boiled and chopped
    1/4 cup yellow mustard
    3/4 cup Light mayonnaise
    Juice of 1 lemon

Directions

Boil or bake potatoes and dice. Dice vegetables and mix all ingredients except potatoes in medium sized bowl. Add potatoes and mix well. Refrigerate for 4 hours or overnight.
