Ingredients

    3 boards matzah
    1.5 cups 1% cottage cheese
    8 oz light Feta cheese
    .5 cups egg whites
    215 g onions
    3 cloves garlic
    3 carrots, grated
    7 oz can drained chunk lite tuna in water
    olive oil spray
    326 g frozen chopped spinach

Directions

saute onions and garlic. add carrots. cook. add spinach. cook until defrosted.
mix cottage chese, feta cheese, tuna and egg whites
wet matzah. put one sheet in deep pan. put in half of cheese-tuna mixture. add in half of veggies. repeat ending with a layer of matzah. spray with olive oil spray. bake at 350 for 40 minutes.
